Oh My… Jackpot!!
If you are looking for a very versatile Muffin that is super soft and moist, THIS IS IT!! These yogurt muffins are super delicious. And what makes them so great is that you can use any of your favorite yogurts in them and they taste amazing!!
And no…. A Muffin is not the same as a Cupcake. Although the ingredients are almost similar. Cupcakes usually contains butter where as Muffins usually have oil in to replace the butter. Also cupcakes usually have more sugar than Muffins. Muffins usually have nice mix-ins added into the batter, like blueberries, nuts, or dried fruit. Often making Muffins the healthier choice.
Look we all love a good cupcake and by far my all time favorite must be an Oreo Cupcake. http://www.livingdelish.com/oreo-cupcakes/ but sometimes a good muffin just hits the right spots. And did I mention they are healthier?
This recipe is fast to make and definitely fool proof. Each and every time that I have baked them they have turned out delicious. No matter what flavor I made them.
So this is the time to get creative, grab your favorite flavor yogurt and turn it into the best muffins that you have ever tasted. These are simply just incredible muffins.

Yogurt muffins
Preheat the oven to 180˚C and grease a 12 hole muffin tin.
Ingredients
1½ cup all purpose flour
¾ cup sugar
½ teaspoon salt
½ teaspoon Baking Powder
¼ teaspoon Baking soda
1 large egg
300 g yogurt (e.g. Granadilla, Strawberry, Lemon, Cherry)
⅓ cup Sunflower oil (Or canola oil)
Directions
In a large bowl, mix together the flour, sugar, salt, baking powder and baking soda.
Next, in a separate mixing bowl mix together the egg, yogurt and oil. Now add the dry ingredients to the egg mixture. Mix until just combined.
Fill each hole of the greased muffin tin to ¾ full. Bake in a preheated oven for 10 – 12 minutes or until golden brown. Another way to check if the muffins are done, inset a tooth pick into the muffin. If it comes out clean, the muffins are done.
