Do you want to make something special this valentine’s day? These Valentine’s Day Blondies are sure to do the job. Surprise your love ones with these super delicious chocolate chip and hazelnut blondies. A perfect Valentine’s Day Blondie to impress everyone.
The flavor of these blondies are really something special. The chocolate chip, hazelnut and coffee goes brilliantly together. Although I recommend that you use hazelnuts, feel free to use any other type of nut. Or leave out the nuts all together. They will still be crazy delicious.
If you cut these into blocks, depending of the size you should be able to get around 12 large or 24 smaller blocks. I cut mine into heart shapes in the spirit of Valentine’s day and I managed to get around 24 large-ish hearts.
Drizzle these hearts with some melted chocolate and sprinkle with some hundreds and thousands to make them look extra yummy.
Valentine’s Day Blondies
Ingredients
1 1/2 cups all-purpose white flour
1 1/2 teaspoons baking powder
180ml Butter, unsalted
1 1/2 cups Brown Sugar
2/4 teaspoons salt
30ml Strong black coffee (Espresso works well) room temperature.
5ml Vanilla essence
180ml Blanched Hazelnuts, roughly chopped
180ml Dark chocolate chips
Directions
Preheat your oven to 180 ˚C.
Place baking paper / parchment paper in a 30cm X 20cm rectangular baking tray. Make sure the paper has a bit of over hang. Grease the paper with cooking spray and set aside.
In a medium sized pot heat the sugar, salt and butter together until the butter is completely melted, stirring often. Allow the mixture to simmer (Not boil) for around 5 minutes. Remove from the heat. Add the coffee and mix until it is well combined. Allow the mixture to cool until it reaches room temperature.
In the mean time mix together the flour and baking powder in a separate bowl and place aside.
Once your butter and sugar mixture has cooled, mix in the egg and vanilla essence. Whisk until well combined. Now add the flour mixture and stir until combined. Be careful not to overmix the mixture. Now add the chocolate chips and crushed hazelnuts. Stir until combined.
Place your mixture in the prepared baking tray. Work carefully to evenly spread your mixture in the pan. The baking paper / parchment paper will make it a bit tricky but feel free to use your fingers to help spread the mixture. Use the back of a spoon to even the top out before baking.
Bake for around 15-20 minutes or until the blondie is slightly browned and the edges of the blondie starts to crack. Test the blondie to see if it’s done by inserting a toothpick in the center. The toothpick should come our dry with only a few crumbs sticking to it.
Remove from the oven and allow the blondies to cool off while in the pan. Once cooled use the over hang on the baking paper / parchment paper and lift the blondies out of the pan. Carefully place on a cooling rack and allow to cool of completely.
Once cooled you can cut the blondies into your desired shapes. I cut my blondies in heart shapes to celebrate Valentine’s day.
Why not dress up these Valentine’s Day Blondies a little more?
Drizzle some melted chocolate over the cooled blondies. While the chocolate is still wet, sprinkle some hundred and thousands over. Allow the chocolate to set.
Store these blondies in an airtight container. They will last for up to a week. (Well not in our home… here they last 2 days if you are lucky. 😉)
