I grew up with my mother always baking tons of these little jems, and admittingly to today they still remain one of my favourite cookies. 😋
Over the years I changed the original recipe, adding here and there. And the result? A super delicious, or must I say the ultimate peanut butter cookie combined with some delicious chocolate chips…. Mmmm…
Most importantly, have I mentioned that these cookies are also a great hit with the kids. I sometimes think I should bake these cookies in secret. I’m sure I will get more baked cookies out in the end. As soon as they know that I’m making these cookies they are ready to help. And well, helping involves a lot of the dough not making it to the baking sheet. 😂
To me the true secret to the ultimate peanut butter cookie is the quality of the peanut butter that you use. I alway use a crunchy peanut butter. This leaves bits of peanuts in your cookie and of coarse, make sure to use real butter for this one. It makes a big difference in the taste.
And, also remember to cover your chocolate chips in some flour before your mix them into your batter. This is a simple trick that I have learned. It helps your chocolate chips to evenly distributed throughout your batter.

This recipe yields about 40 cookies, depending on the size.
The Ultimate peanut butter cookie
Ingredients
125 g Butter, Softened
125 ml Peanut Butter
100 g Sugar
90 g Brown Sugar
5 ml Vanilla Essence
200 g Flour, sifted
3 ml Bicarbonate of Soda
2 ml Salt
2 eggs
100 g Chocolate chips
Instructions
- Preheat oven to 180ËšC and grease two baking sheets.
- Cream the peanut butter, butter and sugars until light and fluffy.
- Gradually add the flour, bicarbonate of soda and salt. Make sure to beat well.
- Add in your eggs one by one making sure to mix well after adding each egg. Add the Vanilla and mix well.
- Stir in the chocolate chips, making sure they are evenly distributed.
- Roll into little balls, each about the size of a walnut and place them on your greased baking tray. Leave enough space between them to allow them to spread. Use the back of a fork and flatten each cookie slightly.
- Now, Bake for 12-15 minutes or until golden brown.
