The best chocolate cake EVER!!

Yes, yes, I know. Every one has that one recipe they claim to be the best chocolate cake ever. Some rich and dark, some fudgy and some as light as a feather. But I can honestly say, you have never tasted a chocolate cake as good as my mother’s. My mother bakes the best chocolate cake ever, I mean you can not stop eating it!! This cake never sees day 2.

This amazing chocolate cake is moist, melt in your mouth soft and simply just delicious!!!

CAKE :

125 ml of Boiling water
250 ml Sugar
30 ml Cocoa powder
¼ teaspoon salt
1 ¼ cups of white flour
3 teaspoons baking powder
125 ml sunflower oil
5 ml Vanilla essence
5 eggs

Preheat the oven to 180 ˚C (Fan assisted oven)

Separate the eggs and whisk the egg whites till soft peak stage. Mix the boiling water with the sugar and cocoa. Stir until well combined. Set this aside and allow it to cool off. Once cooled, add the oil.

Add the egg yolks, salt and vanilla essence to the cooled oil mixture, and mix well. Mix in,alternating between your oil mixture and the flour Stir in 2 teaspoons of baking powder. And give a quick mix to make sure all your ingredients is mixed in. Now fold in the whisked egg whites and the last teaspoon of baking powder.

Bake for 20 min, or until done.

CHOCOLATE WHIPPED CREAM FROSTING:

1 cup Powdered sugar
½  cup cocoa powder
¼    Cup cooled milk
2 Cups chilled whipping cream

Sift the powder sugar and cocoa together, stir in the milk and mix well.

Using an electric mixer, slowly beat the whipping cream into the chocolate mixture. Scrape down the bowl to make sure all the chocolate is well mixed in. Once all the chocolate mixture is mixed in, start to increase the mixer speed and continue to mix until very stiff peaks are formed.  

Now spread the frosting in between the cake layers and all over the cake.
