As good as what bacon and eggs sounds each morning, I can not have to much of it. I like porridges, yoghurts, or even the occasional fruit as a breakfast option.
A While ago I was given a recipe for a sugar free granola. I played around with the recipe and found the perfect combination. Add some plain Greek yoghurt and you have a delicious breakfast. I often catch myself with a handful of this granola just munching away as a snack 😊 I simply just can’t help myself. It’s just way to gooooood…..
Sugar free Granola
Makes +/- 4 cups
Ingredients:
3 cups coconut flakes
2 cups mixed nuts & seeds (eg. cashews, pecans, walnuts, almonds, pumpkin seeds, flaxseeds, sunflower seeds)
2 tablespoons of Chia seeds
4 tablespoons of Cacao Nibs (Optional, but recommended)
1 teaspoon of ground cinnamon (Optional)
½ teaspoon of ground ginger
80-100 g Coconut oil
Preheat your oven to 120 ËšC. Grease a baking tray.
Combine all the ingredients, making sure that the coconut oil covers everything well.
Spread out evenly over your prepared baking tray.
Bake in your oven until golden brown, this will take +/- 15 minutes. Make sure to mix and turn throughout the cooking process.
Remove from oven and allow to cool. Store in an airtight container and consume within a week.
Tip: The longer you bake your mix, the crunchier it will become. Just be careful not to burn the mixture.
As this recipe has no added sweetness, feel free to add some blueberries to your granola when eating it with yoghurt for example.
