Spicy Lime & Honey Chicken

This spicy Lime & Honey Chicken is baked to perfection in a sweet, spicy and citrusy sauce which creates a delicious caramelizes layer on the chicken pieces. This is a perfect, mouth-watering week night dinner ready within 40 minutes that is guaranteed to be loved by the whole family.
Serve this chicken with a lovely fresh Greek salad or cauliflower rice to keep the carb count low.

Spicy Lime & Honey Chicken

Ingredients

+/- 8 pieces of Chicken
15ml Olive oil or avocado oil
a few lime slices for serving
Sauce:
1/4 cup honey or a Keto friendly liquid sweetener
30 ml low sodium Soya sauce
15 ml Lime juice
15ml Garlic, crushed
Rub:
2.5ml Salt
2.5ml Black pepper
3ml Cayenne powder (Adjust more or less to your taste)
5ml Smoked Paprika
2.5ml Ginger, grounded
2.5ml Mustard Powder
5ml Onion powder

Directions

Preheat your oven to 180 ˚C
Grease a (large enough to hold 8 pieces of chicken) oven proof dish and add the 15ml olive oil. Set aside.

In a bowl mix together all the ingredients for the sauce and set aside.
In a separate bowl mix together all the ingredients for the rub.
Rub the chicken with the prepared rub. Make sure to cover the entire chicken piece with rub. Once covered place the chicken in the prepared dish.

Bake the chicken for 10 minutes before turning the chicken over and baking the other side for another 10 minutes. Remove the chicken from the oven and spoon the sauce over the chicken pieces. Place back into the oven and bake for another 10 minutes or until the chicken is done.

Allow the chicken to cool for 5 minutes in the sauce before serving. Place some lime slices with the chicken pieces on a plate and serve.

Serve this Spicy Lime & Honey Chicken with a delicious Greek side salad or some cauliflower rice. Simply delicious!
