Have you ever had Roosterbrood? Well, let me translate first. “Rooster” means grid. This will be like a BBQ/Braai grid. And “brood” means bread. So literally it means Grid bread. Doesn’t sound to great. But I promise you these are addictively tasty.
The dough is similar to bread dough. In actual fact if you are running short of time you can use ready-to-use store bought bread dough.
Simply flatten the dough into a rectangle shape. Using a sharp knife, cut the dough into 6 – 8 equal pieces. Shape each piece into a square and make sure to flour the top of each roosterbrood.
Then continue with the baking instructions mentioned below.
Serve them hot and straight from the grid. Try cutting them open and spreading some butter on them, allowing the butter to melt into them…. OH!! So NICE!!
This recipe makes 8 – 10 roosterbrood pieces.
Roosterbrood
Ingredients
1Kg Cake flour
12.5ml salt
10g Instant yeast (1 packet)
25ml Sugar
500ml lukewarm water
50ml Olive Oil
Directions
Sift the flour and salt together in a large bowl and set aside.
Add the lukewarm water, sugar and yeast into a jug. Stir until the mixture is mixed. Allow the mixture to rest for 5 minutes or until it bubbles and makes a layer of foam on top. Now add the yeast mixture to the flour followed by the olive oil.
Mix together. If the dough is too stiff, add a little water and mix thru, repeat if it is still to stiff, only adding a little water at a time. You do not want the dough to be runny.
Start kneading the dough. If you have a standing electric mixer you can use it to knead the dough for you. Or knead by hand on a lightly floured surface.
Keep kneading the dough until it is smooth and elastic this will take up to 10 minutes.
Allow the dough to rest
Cover the dough with lightly oiled cling wrap and then a clean kitchen towel over it. Place the covered bowl of dough in a warm place and allow the dough to rise for 15 minutes. Remove the cling wrap and knead the dough again for a minute or two. Now cover it again and allow the dough to rise for 30 minutes.
Place the dough on a lightly floured surface. Use a rolling pin, slightly flatten the dough into a rectangle shape. Using a sharp knife, cut the dough into 8 – 10 equal pieces. Shape each piece into a square and make sure to flour the top of each roosterbrood.
Time for baking
Place the dough on the braai’s grid(Or BBQ grid 😁). Bake the dough on gentle coals for 15-20 minutes, turning them often. A roosterbrood is ready when you tap on it and it sounds hollow. Alternatively you can insert a knife into it. If it comes out dry they are then baked.
Serve warm with some butter or Jam.
