Well, these are pancakes – The South Africa way. You might know them better as Crepes. Over here we like to eat them filled Cinnamon sugar and a slice of lemon.
I remember my mom use to bake pancakes on rainy days. And even till today, I can not resist the urge to bake pancakes whenever it starts to rain. You can say this has become a little bit of a tradition.
These pancakes are light and fluffy not to mention that you will only need a few simple ingredients to make these delicious pancakes.

Pancakes
Makes 16-20 pancakes
Ingredients
250 ml Cake Flour
5 ml Baking powder
2 ml Salt
125 ml Sunflower oil
400 ml Full cream milk
2 eggs, large
Filling
Cinnamon Sugar
Directions
Sift the flour, baking powder and salt together, add the oil and milk. Keep mixing until the mixture is smooth and there are no visible lumps.
In a separate mixing bowl, beat the eggs very well. Now stir the egg in to the flour mixture.
Heat a little bit of oil in a frying pan. Once hot pour any access oil out into a small bowl. Add roughly 60ml batter to the pan. (Just enough batter to make a thin layer on the pan.) Swirl the pan around to make sure the mixture fills the whole pan. Bake for a few minutes, until the edges starts to pull away from the pan’s sides, carefully flip the pancake and bake on the other side for a minute or so.
Turn the pancake out on top of a plate, sprinkle with some cinnamon sugar (to your taste) and roll the pancake up. Move on to the next pancake until all the mixture is used up.
Serve as is or with a slice of lemon, just to balance out the sweetness.
