Mmmm – Marshmallow truly magic, squishy, soft and fluffy. Enjoy them sandwiched between biscuits, melted over the fire or mixed in with your hot chocolate… we all have our favourite ways to eat these little fluffy treats. Hey here is something interesting, did you know this widely enjoyed treat actually comes from ancient Egypt.
Back then they made marshmallows using the sap of the Marsh-mallow plant. However today they use a mixture of gelatin, sugar and flavorings to make them. These little fluffy treats are used in all kinds of confections from fudge, marshmallow fondant to chocolate mousse and sandwich spreads. I bake a lot of cakes, so the most popular use for marshmallows in my house is Marshmallow fondant. Well, that’s if the kids did not find my secret stash first. 😂
This fondant recipe is real simple to make, tasty and surprisingly quick. This really puts a new spin on Marshmallow magic. 😂
Here are some easy to make recipes all using Marshmallows.
Marshmallow fondant
Ingredients
115g White Marshmallows
15 ml Water
425ml Sifted icing sugar
Couple of drops of food colouring, colour of your choice
Heat the Marshmallows and water in a microwave safe bowl for about 30 seconds, stir and microwave again until the marshmallows puffs up and melts completely.
Slowly start adding in the icing sugar while mixing. When it gets very thick use your hands to mix. If the mixture is too thin add some icing sugar. It should have the consistency of store bought fondant.
You can now add your food colouring and keep kneading your fondant until smooth.
Marshmallow magic Fudge
Ingredients
250 ml Brown sugar
125 ml Evaporated milk
15ml milk powder
60g butter
125ml Marshmallows
5 ml Vanilla Essence
180g Chopped white chocolate
Line a 20X28cm tin with baking paper. And set aside for later.
In a thick base pot, heat the brown sugar, evaporated milk, milk powder and butter until it has reached the 110ËšC (You can use a candy thermometer to help you out.)
Now add the marshmallows and vanilla essence and stir until smooth.
Add in the chopped chocolate, and remove your pot from the heat. Stir until it’s all melted in. Pour the mixture into the prepared tin and set aside for 2 hours or until cooled. Now cut into squares and enjoy!
Rice krispies Treats
3 tablespoons of butter
1 packet (400g) Marshmallows
6 cups Rice Krispies Cereal
5 ml Vanilla Essence
In a large pot, melt the butter over low heat. Add the Marshmallows and stir until melted.
Now add the rice krispies cereal and mix until its well coated.
Spread the mixture into a well greased 13×9 inch pan, and allow to cool. Cut into squares.
