As the cold rainy weather set in we all crave a hearty and warming stew. Vegans definitely do not have to miss out on any hearty stews. 😁
You just have to try this delicious Lentil stew.
This stew is really great. It’s pack full of wholesome vegetables and the lentils really makes it filling. You can add pretty much any vegetables that you like or leave out the ones that you don’t like. 😉
This stew cooks within 40 minutes, and makes enough for 4 people with some leftovers, Yummy!!
You can always freeze the extra leftovers and save it for another rainy day… 😂
If you would like to freeze the extras it’s advisable to freeze them in individual servings. Make sure it’s cooled off completely before you freeze the portions.
Lentil stew
Ingredients
1 red onion, diced
1 teaspoon of crushed garlic
3 potatoes, diced into cubes
1 cup baby carrots
1 cup mixed frozen peas and corn mix
3 Baby marrows, thinly sliced
4 yellow patty pans, cut in quarters
2 cups of spinach, shredded
2 red peppers, diced
1 1/2 cups lentils
+/- 5 cups of vegetable stock or broth
1 teaspoon dried rosemary
3 teaspoons of tomato paste
1/2 teaspoon dried thyme
2 teaspoons mustard seeds
2 teaspoons soya sauce
Instructions
Using a large pot heat a little olive oil. Just enough for frying. Now add the diced onions and fry for a minute or two. Add the garlic and fry for another minute. Add the remainder of the ingredients except the baby marrows, patty pans and spinach.
Bring the pot to boil, then reduce the heat. Let the mixture simmer for 30 minutes while stirring often. Add salt and pepper to taste.
After 30
minutes add in the baby marrows, patty pans and spinach, allow the stew to boil
for another 10 minutes, stirring often.
If your stew seems to watery you can mix in a little cornstarch. Do this by
mixing 1 tablespoon of cornstarch with 15 ml of water in a glass. This will
form a paste, make sure there are no lumps. Add this now to your stew and stir
it through. The mixture should thicken.
You can serve this on it’s own with some bread or make some polenta and serve with your lentil stew.
