Honey and Mustard chicken
Ingredients
2 tablespoons honey
2 tablespoons wholegrain mustard
1 teaspoon smoked paprika
2 teaspoons crushed garlic
1 teaspoon smoked paprika
6 chicken thighs, skin on
4 medium size potatoes, peeled and diced into 3cm blocks
2 tablespoons olive oil
Directions
In a small dish, mix together the honey, mustard, garlic, paprika and one tablespoon olive oil. Pour the marinade over the chicken, and allow to rest for half an hour.
While the chicken is marinating, heat the oven up to 180˚C and grease a ovenproof dish.
Mix the remainder teaspoon of olive oil with the potatoes in the prepared dish. Season with salt and pepper.
Place the marinated chicken, skin side up on top of the potatoes.
Bake for 15 minutes, then flip the chicken, bake for a further 15minutes. Flip the chicken around again and cook the last 5 minutes. The skin should be caramelized and charred in places.
Serve this delicious chicken with a side of vegetables or a refreshing salad…. A perfect midweek dinner served within an hour…. A sure family hit 😋
