It’s Sunday Morning, And the rain softly falls on our roof… Mmmm….. some comfort food is needed for breakfast. And what better than Flapjacks. Or you might know them better as Crumpets. These little delicious and fluffy cakes are all you need for a perfect breakfast. (or any time snack)
These little guys whip up in less than 5 minutes and bakes on the stove top. In no time they will be ready. You can serve them with Syrup, Honey, Jam and lots of Fresh whipped cream.
Flapjack / Crumpets
500 ml White Flour
45 ml Sugar
2 ml Salt
2 Eggs
250 ml Water
125 ml Milk
30 ml oil (Sunflower oil)
15 ml Syrup
20 ml Baking powder
In a large bowl, sift together the flour & baking powder. Add the sugar and salt. In a separate bowl whisk the eggs, milk and water. Mix the egg mixture into the flour mixture. Mix well, make sure to scrape the sides of the bowl frequently. Now add the oil and syrup and mix well. Stir in the baking powder until combined.
Heat a well grease non-stick frying pan. Spoon mixture with a large tablespoon onto the hot pan. Once the flapjack looks like they are bubbling, turn them over and cook the other side for a few minutes till golden brown.
This recipe makes +/- 18 flapjacks, depending on the size.
Serve hot with syrup, honey, jam and some fresh cream.
