Hey Hey… Easter is coming… I just love Easter. Along with Christmas these are by far my favorite holidays! I love going all out and really having fun with the holidays. This Easter I decided to make some Easter Cookies for our Easter Sunday Lunch. This recipe is brilliant. It is a traditional sugar cookie recipe. It’s super easy to make and you can play around with flavors and still have an awesome result. This recipe has vanilla essence as flavoring. But I made mine using some lemon flavor instead. Mmmmm…. Delicious!!
This recipe makes around 24 cookies. But I used very large bunny cookie cutters for these cookies. I managed to get 5 large bunny butts and 5 large bunny faces and around 10 smaller flower cookies.
Sugar Cookies / Easter Cookies
Ingredients
3 cups all-purpose flour (plus extra for rolling out)
¾ teaspoon baking powder
¼ teaspoon of salt
250 ml butter, softened
1 cup sugar
1 egg, beaten
15 ml milk
5 ml Vanilla essence (Or any flavor of choice)
Instructions
Preheat your oven to 180˚C.
Grease a cookie sheet or pan and set it aside.
Start by sifting the flour, baking powder and salt together and set aside.
In a separate bowl and using a stand mixer, cream the butter and sugar until light and fluffy. Take your time with this and make sure that the mixture is really light and fluffy.
Now add the egg, milk and Vanilla essence and mix well. Using your mixer on a lower speed, slowly add the dry ingredients and mix until well combined. The mixture should pull away from the sides of the bowl.
Divide your dough into two and wrap each half tightly with some clear wrap. Let the dough rest in the fridge for about an hour.
After an hour remove the dough from the fridge. Lightly sprinkle some flour on the tabletop and roll the dough out to about ½ cm thickness.
Cut out your shapes using your cookie cutter and carefully lift up your cut cookie. Place this on your well greased cookie sheet. Remember to leave around 3 cm between the cookies.
Bake the cookies for 5-10 minutes, or until the cookie is golden brown. Place the baked cookies on a cooling rack and allow to cool. Once cooled you can store them in a airtight container or you can decorate them with some Royal Icing.
