Chocolate Chunks

Chocolate Chunks are a bit more than just a treat. These chunks are true indulgence at it’s best. Think of your favorite chocolate bar melted and then adding all kinds of delicious treats. Well almost like a rocky road. Only better!

These are two awesome chocolate chunk recipes. The flavor combinations are magical. And what makes this recipe even better is that you can play around with your favorite combinations of fruit and nuts.

Chocolate is the star of the show so make sure to use a good quality chocolate, this recipe also calls for salted nuts. Make sure to use them. The salt from the nuts balances the sweetness of the chocolate.

I use tennis biscuits for this recipe. If you are not familiar with tennis biscuits, let me explain. These are crispy, buttery, coconut flavor biscuit. If you can not find them feel free to use Graham crackers or any sweet buttery cookie. Just add in 1-2 table spoons of toasted, desiccated coconut. It’s the coconut flavor that make these cookies so delicious!

Chocolate chunks

White Chocolate, Cranberry & Macadamia chocolate chunks

12-16 squares, depending on the size of the blocks

Ingredients

500g Chocolate White, broken into small pieces
1 ½ packet tennis biscuits, broken roughly into pieces
250 ml Cranberries, dried
250 ml Salted Macadamia Nuts broken slightly smaller

Directions

Line the bottom and the sides of a square baking pan ( cm X cm) with foil, leaving a 5cm overhang. Then lightly grease the foil with non-stick cooking spray. Set aside.

Melt the chocolate in a double boiler or a metal bowl set over a saucepan of simmering water. Keep stirring until melted.
Remove the chocolate from the heat and stir in the biscuits, fruit and nuts. Then spread every thing in the baking pan.
Freeze until firm. This will take around 20 minutes. Lift the foil overhangs to remove the chocolate from the baking pan and set it on a cutting board. Peel off the foil and cut into 36 pieces.

Store in an airtight container in the fridge.


Milk chocolate fruit & nut Chocolate chunks

12-16 squares, depending on the size of the blocks

500g Chocolate milk, broken into small pieces
1 ½ packet tennis biscuits, broken roughly into pieces
250 ml Cranberries, dried
250ml Salted roast cashew nuts
250 ml Salted, roasted and shelled Pistachios

Directions

Line the bottom and the sides of a square baking pan (20 cm X cm) with foil, leaving a 5cm overhang. Then lightly grease the foil with non-stick cooking spray. Set aside.

Melt the chocolate in a double boiler or a metal bowl set over a saucepan of simmering water. Keep stirring until melted.
Remove the chocolate from the heat and stir in the biscuits, fruit and nuts. Then spread every thing in the baking pan.
