Lemon coconut loaf

Ingredients

For the Loaf:

120 ml butter, softened
200 ml sugar
3 eggs
120 ml buttermilk
2.5 ml vanilla essence
2.5 ml almond essence
Zest of 1 lemon
Juice of 1 lemon
80 ml shredded coconut
180 ml cake flour
5 ml baking powder
A pinch of salt

For the Glaze:

250 ml icing sugar
20 ml Lemon juice
5ml coconut extract

Shredded coconut for decoration

Directions

Preheat your oven to 180°C (350°F). Grease a loaf pan (9×4 inch).

In a mixing bowl, beat butter and sugar together until light and fluffy.

Mix in the eggs one at a time, beating well after each addition. Then, add buttermilk, vanilla essence, almond essence, lemon zest, and lemon juice.

In a separate bowl, sift together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until smooth. Stir in the shredded coconut.
